Iain has been involved in the cheese industry since he left school in 1979. Originally he trained as a laboratory technician with the North of Scotland Marketing Board. He trained as a cheesemonger at the Board's Claymore Creamery in Kirkwall, Orkney. From there he moved to become head cheesemonger at the Claymore Cheese Factory in Inverness. In 1986 Iain moved South to take up the post of assistant manager of a large Cheshire cheese manufacturer.

After seven years South of the border, Iain has returned to Scotland to start his own business selling and ripening farmhouse cheeses of exceptional high quality in order to meet the consumer's needs.

Iain has worked in a large cheesemaking factory as well as smaller, traditional farmhouse dairies. He has deep feelings of what makes a good cheese and sells only the cheeses he feels have the quality and taste to be labelled farmhouse cheese.
